With its origins in Bordeaux, Cabernet Sauvignon is a long way from home. It is traditionally not widely planted in the Hunter Valley as it ripens late and therefore risks getting caught in late harvest rain. However, when planted on the right soils and with yields kept low the vine can achieve grapes of concentration and perfect ripeness and can make outstanding wines. We have been making Cabernet Sauvignon since we started Margan in 1996. We don’t have much planted therefore the volumes are always small. The wines are elegant in style, rich and concentrated with classic cassis and cigar box notes. The fruit is balanced with hallmark acidity and tannins which ensure long term aging. Just like Hunter Shiraz, Hunter Cabernet has a different structure to Cabernets from other areas and from our red soil we produce a fantastic example of what great Hunter Cabernet can be like.
