The Hunter Valley makes soft red wines and  Merlot is an inherently soft variety creating a regional varietal that is soft with full fruit and fullness. Minimal oak has been used to allow the wine to focus on the fruit quality. We planted our  Merlot here behind the winery using cuttings from an old Merlot vineyard. The experts suggested that this was the wrong thing to do as the vineyard would be unreliable in yield. They were right that it is unreliable in yield but it is very reliable in quality and that is more important than yield. Merlot is a soft variety and the Hunter makes soft red wine so it is a good fit with its dark fruit characters combined with the Hunter spiciness.

Merlot is a softer variety that has plush fruit characters and silky tannins. Combined with a hint of spice… you had me at merlot.
