Lisa's Torta di Mele recipe

Lisa’s apple torte with walnuts and figs

Lisa Margan's Apple Torte

Ingredients

Torte

6 large apples- (granny smith or gala) peeled, cored and sliced finely

Juice and zest of one lemon

160 g brown sugar

125 g unsalted butter

3 eggs

100 g castor sugar

1 teaspoon vanilla extract

100 ml milk

150 g pl flour

2 teaspoons baking soda

Topping

50g brown sugar

1 tablespoon each of cinnamon and icing sugar

100 g walnuts, coarsely chopped

Method

Line a 24 cm spring form cake pan.

Combine apples with lemon juice and zest in a bowl.

Whisk eggs, vanilla and sugars until pale and creamy

Melt butter, add to milk and add to egg mixture.

Sift flour and baking powder and fold into batter.

Pour one third of batter into pan and top with a layer of one third of sliced apples.

Repeat twice finishing with apples on top.

Combine walnuts, extra sugars and cinnamon and scatter over the top.

Bake for one hour in an oven at 180 deg for 70 mins. Remove and let rest in pan until cool.

Serve with cream, honey and figs.
