Carrot cake


It’s always handy to have a great carrot cake recipe at your fingertips. Here’s a nice and simple recipe that never fails and always pleases. Our Margan kitchen garden has carrots in all shapes and sizes, colours and varieties.The ‘wobbly ones’ are great to use for this recipe.


2 cups all purpose flour
2 tsp baking powder
1 tsp salt
4 large eggs
1½ cups vegetable oil
2 cups sugar
2½ cups grated carrot
1 cup walnuts
½ tsp allspice
½ tsp cinnamon


Preheat oven to 170 degrees celsius. Grease a 25cm baking loaf tin and add baking paper. Sieve dry ingredients, set aside. In an electric mixer beat together eggs, sugar and oil for five minutes then add to dry ingredients. Fold in remaining carrots and walnuts.
Pour mixture into loaf tin and bake at 170 degrees celsius for 30 minutes. Cool and ice.


600g icing sugar
100g unsalted butter
300g cream cheese
1 lemon, juice and zest

Beat icing sugar and butter in electric mixer on medium speed until mix is smooth and fluffy. Add cream cheese and lemon and keep beating until incorporated and smooth.
