2014 Aged Release Shiraz

The Story

This range showcases the ageing potential of iconic Hunter Valley Shiraz which is meticulously cellared for five years and then re-released. These wines are renowned for their unique style, elegance and capacity to age and are true celebrations of terroir.

Why we love it

We love this wine as the hard work in careful temperature-controlled cellaring is already done and the temptation to enjoy it earlier was removed. It is ready to enjoy now as a wine that still has great primary fruit characters but also with some age and complexity.

Viticulture Specs

The grapes for this wine are carefully selected parcels of our old-clone Shiraz from our Timbervines Vineyard. There are eight unique blocks, all with different clones and we select the best performing ones for each vintage. We wait until the grapes reach perfect flavour (phenological) ripeness to harvest them, around 13.7 potential alcohol.

Winemaking Specs

The grapes are fermented on their skins at cool temperatures with a cultured aromatic yeast. The wine is then pressed, and we choose the best ‘press cuts’ from the middle of this cycle as they are higher in tannin and more concentrated in fruit. The wine is then transferred to new French oak barriques, where it undergoes secondary (malolactic) fermentation and then continues to mature for another 18 months.

Tasting Notes

The wine is concentrated in colour, aromas and flavour. The nose has blueberry, blackberry and cigar box and the palate replicates this with additional cassis, dark chocolate and tobacco leaf. Some regional Hunter earth and spice adds to the complexity. The oak frames the fruit and add tannin, spice and structure and the finish is long and complex.

This is a wine to really savour for its concentrated fruit, complexity balanced palate and long finish. Enjoy it with roasted red meats or mature cheese. It has the tannin structure and acidity to allow for continued development over the next three decades.
