The answer to make an interesting Negroni is to use a  drier style Vermouth and putting it with a less aromatic Gin. It’s been an interesting project as we have built this great Vermouth from the ground up. This is the only Hunter Valley Semillon Vermouth from the 2015 vintage on the market. It has been made from a base of Semillon grown on our own vineyards and added to spirit that was distilled from the same base wine. Of the 22 herbs and spices used, to provide the aromatics, the majority of fresh ingredients were sourced from our gardens.

Tasting Notes
The base wine was Semillon from a ripe vintage with excellent acidity and fruit flavor. Primary flavours of citrus were subtle to provide an excellent base for the added aromatics. Some of the base wine was sent to be distilled. The distilled alcohol was then used to soak with the selected aromatics (the herbs and spices) for a month before the drained solution was then added back into the Semillon base wine. Some grape concentrate and molasses were used for sweetening
Ratings
CitiMag - July 4, 2016 -Farrin Foster “...Ollie says vermouth fits in perfectly with the evolving Australian palate, which is moving away from mass-produced, high-alcohol drinks toward something a little more flavour-focussed... Additionally, the Margan Wines property in NSW’s Hunter Valley had all the necessary elements for a vermouth available on site... The result of this 18-month or so long process is an off-dry vermouth that Ollie says has the ability to bring great texture to cocktails...” Australia’s Wine Business Magazine – July 2016 -Mike Bennie Rated 94 Points Australian Financial Review - June 10, 2016 - Tim White “This has fabulous aromatics, star anise liquorice and full of candied peel. Lemon thyme, too. Tight dry and sharp on the tongue, that liquorice again and sharp bitter peel balanced by just the right sweetness. Perfectly weighted. Rocks and soda please. 95 points. The Australian – June 7, 2016 - Max Allen “…It’s bloody good, too: punchy fragrant green aromas, nice citrusy hint of sweetness, good, tongue- gripping bitterness. It makes me think of making a martini…” Gourmet on the Road – June 2, 2016 - Winsor Dobbin “The world’s first vintage off-dry vermouth made from Semillon…Margan Vermouth is made from the ground up using over 20 aromatic elements including orange peel, star anise and bergamot, the majority of which are sourced from the Margan Restaurant kitchen garden…” Drinks Bulletin – May 26, 2016 - Rachel Tyler “…Vermouth is starting to regain significant momentum in the international bar scene and there is no reason, given our access to unique botanicals and flavours, that Australia shouldn’t be leading the charge…”
