The answer to make an interesting Negroni is to use a drier style Vermouth and putting it with a less aromatic Gin. It’s been an interesting project as we have built this great Vermouth from the ground up. This is the only Hunter Valley Semillon Vermouth from the 2015 vintage on the market. It has been made from a base of Semillon grown on our own vineyards and added to spirit that was distilled from the same base wine. Of the 22 herbs and spices used, to provide the aromatics, the majority of fresh ingredients were sourced from our gardens.
The base wine was Semillon from a ripe vintage with excellent acidity and fruit flavor. Primary flavours of citrus were subtle to provide an excellent base for the added aromatics. Some of the base wine was sent to be distilled. The distilled alcohol was then used to soak with the selected aromatics (the herbs and spices) for a month before the drained solution was then added back into the Semillon base wine.
