Our Saxonvale Vineyard has 40 year old chardonnay vines planted on the volcanic soil of the Fordwich Sill. Low yielding with shaded canopies creates fine flavoured grapes. The intricate nature of the wine provides for interesting aged complexities if you can wait. This modern Australian chardonnay shows the perfect balance of funky natural ferment derived aromas, while still remaining bright and sprightly.
Even with all the secondary and tertiary flavours from fermentation and aging, this wine still has a fresh citrus nose and strong grapefruit flavor. The luscious texture is balanced by well integrated oak, great minerality and a long persistent finish
This wine was picked at lower sugar to keep its leaner structure and citrus overtones. It was fermented in 500 litre puncheon barrels using high solids, natural yeasts and a moderated ferment temperature to create further complexity. The creamy midpalate from extended lees contact and batonage are emphasized by the new French oak flavours and follows through onto a nutty finish. This style of wine allows for early drinking but there is an opportunity to allow this wine to age.
