2025 Breaking Ground Cabernets
A wine inspired by Andrew, Lisa and Ollie’s time spent living and working in Bordeaux. This is the perfect combination of tradition and evolution.
A blend of the free run juice from the Saxonvale vineyard Cabernet Sauvignon (70%) and the newly regenerated Ceres Hill Cabernet Franc block (30%). The grapes are harvested and fermented separately, with wild yeast in small open vats. When the grapes are pressed, the free run juice kept aside for the Breaking Ground bottling, resulting in full spectrum aromatics without the heft and grip of fully extracted tannins. This wine is matured in large, seasoned French oak barrels for nine months prior to bottling.
