Off-Sweet Vermouth

Vermouth
Semillon is harvested from our sustainably farmed Ceres Hill vineyard and fermented to table wine. A portion is distilled, with the remainder matured in seasoned French Oak. From the Margan kitchen garden, we harvest wormwood, makrut, bay, chamomile, lemon verbena, rosemary, thyme, pineapple sage, lavender, and a raft of soft citrus. These, in addition to an assortment of dried spices, are steeped in the Semillon eau de vie for several weeks before being strained into our base wine.
